Everflyht

Everflyht is a single estate vineyard set at the foot of Ditchling Beacon in the heart of the South Downs National Park. The name 'Everflyht' is inspired by the six Martlets of the Sussex crest symbolising knowledge, adventure, and learning. Said to never land, these birds are 'ever in flight'.

Founded by the Ellis family - Ben, Sam, and their three daughters - Everflyht began over a decade ago with a passion for sparkling wine. The vineyard was established in 2016 and has since pioneered regenerative viticulture practices, setting aside 3.5 hectares of land for biodiversity with over 400 trees, wildflower meadows, and 800m of hedgerow around the estate.

The vineyard's unique terroir features clay loam soil with bands of colluvium, situated at 65-74m above sea level, creating ideal conditions for their classic sparkling grape varieties: Pinot Noir, Pinot Meunier, and Chardonnay.

Everflyht is committed to regenerative viticulture practices that enhance biodiversity and soil health. Their approach includes careful soil management to increase organic matter, extensive planting of cover crops between vines to promote insect and pollinator populations, and encouraging natural growth under established trees.

The vineyard is divided into three distinct blocks - House, Oaks, and Pond - each with its own unique composition of grape varieties, allowing for complex and balanced wines that truly express the Sussex terroir.

Everflyht produces exceptional English sparkling wines using the classic varieties of Pinot Noir, Pinot Meunier, and Chardonnay.

Everflyht Cuvée Edition 3

A refined blend of Pinot Noir, Chardonnay, and Meunier, hand-picked from their single estate vineyard. This traditional method sparkling wine offers fresh and generous complexity, with notes of crisp apple, brioche, and citrus, aged for 20 months on the lees for robust depth and lasting elegance.

Everflyht Rosé de Saignée 2022

A luxurious blend of 53% Pinot Noir and 47% Meunier, meticulously hand-harvested from the estate's 2022 vintage. With its luminous coral pink hue, this cult wine presents sumptuous layers of ripe cherry and sun-warmed red fruits, artfully intertwined with whispers of buttery patisserie and a finish that is both sumptuous and enduring.

Everflyht Blanc de Blancs

Made exclusively from Chardonnay grapes grown on the estate, this elegant sparkling wine showcases the purity of the variety with notes of green apple, white flowers, and a distinctive mineral character from the South Downs terroir. The extended lees aging brings complexity and a refined mousse to this sophisticated wine.

Everflyht Cuvée Prestige

The flagship wine of the estate, blending the finest parcels of Pinot Noir, Chardonnay, and Meunier from exceptional vintages. This premium sparkling wine offers remarkable depth and complexity with notes of baked orchard fruits, honey, toasted nuts, and a long, refined finish that showcases the best of English sparkling wine.

Tour and Tasting (£30pp)

Your experience includes a 45-minute guided tour through the stunning vineyard, followed by a tasting of three sparkling wines. Available every Saturday at 1:30pm throughout the vineyard growing season from April 4th to October. Please allow 2 hours for the experience.

Private Tour and Tastings (£42pp)

Enjoy exclusive access to the Everflyht tasting room and vineyard for a private tour and tasting. With a minimum of 10 guests, you can explore the Everflyht Estate with the Vineyard Manager and then settle into the tasting room to sample their sparkling wines along with a local produce platter. Tours last for approximately 2-2.5 hours.

Seasonal Workshops and Events

Throughout the year, Everflyht hosts special events including craft workshops, stargazing experiences, wellness days, and seasonal celebrations. All events include Everflyht sparkling wine and are designed to showcase the beauty of the vineyard through different seasons.
